I want to design an application that shows a series of forms to a user. Once they fill out the forms - in order - it should generate several pie charts summarizing some of the data they input, perform some calculations, and create some reports based on the data they input that they can print out.

Do you guys have any suggestions for an application I could use to set something like this up? ... or have any other suggestions?

I would use Flash. Once the form has been filled in, some PHP code calculates the input, and then sends it in a readable form to Flash to be converted into a graph, or a pie chart.
