I would go for Drupal as I've heard it guarantees the best site security option which is crucial if you're going to accept CC payments but I haven't used it personally yet
I found Wordpress a jump from Microsoft Expression but do-able with some work; Joomla i couldn't get into and Drupal I've heard that the user interface is poor.
For 20 - 25 page sites with a simple ecommerce integration and a wiki, Wordpress should be fine but if you are planning to scale it up into something large, the the more powerful CMS platforms would be better.
Both Drupal and Joomla are strong contenders and will do all your requirements just fine. You will have to try out both and see which suits you. Both require a different approach due to the different CMS model they use.
Joomla no doubt the best, Opensource, community updates, and a lot of professional templates and extensions available. Saves time in coding custom scripts, and designing the layouts.
I'm for Wordpress. I'm using it on 4 of my websites and I'm really satisfied.
From my point of view is the most flexible CMS. You can make anything you wish with wordpress and also it's pretty easy to make a SEO onpage optimization on a wordpress website.

Wordpress is the best, Joomla is just a pain in the *** to teach a client who knows nothing about computers. Wordpress can do everything and more than Joomla right now.
Although wordpress needs to make the custom fields a little easier for clients as its a little for the customer to have to find the path to an image first and then copy only the /wp-content/etc/etc.
Thats the only problem with wordpress. I have not tried Drupal yet, is it even worth trying out?

I personally use Wordpress. Its very easy to setup, my clients don't have issue in understanding how to use it. And most of the things you need for using it is widely available.
