The conversions have not been where we would like them to be and I am wondering if it is because not enough people (general public) are familiar with Google Checkout.
Has anyone experienced a similar problem?

I doubt its a processor awareness issue, However i personally use paypal as the IPN is much more easy to integrate into custom systems.
I would also use Gcheckout however I would use paypal first.
On to your question.
Cant say ive ever seen this issue. It may be the case with other more unknown processors however as its google i doubt anyone would think twice.
I would if I knew of a way to use both without having two buttons.
How would you expect your users to select their prefence without having "two buttons"??

I just don't want two "add to cart" buttons on the product page. I would be fine with them having a choice of how to proceed on a checkout summary page.

That may well lose you the impulse buyers. Give the punters every opportunity to buy the product.
