I am working on a E Commerce site with around 1000 items in 15 categories, and we went with "Landing Pages". These are category pages linked from the main page. They act as a hub, and very often if carefully developed will get indexed on their own merits and act like "mini store fronts". This help with the relevancy of your main page also, as we all know the more products you have there the harder it is to hit a decent relevancy % for the page. I used this process on my backgrounds/images site, and all of the "landing" pages are now indexed and getting a bunch of backlinks also on their own.
